Mother Rock is Swartland winemaker Johan Meyer's natural-wine label, working with organically, dry-farmed vineyards on decomposed granite and Malmesbury shale soils. The 2023 Force Celeste - Cuvee P.N. is a petillant naturel rose of 78% Pinotage and 22% Chenin Blanc from the Kweperfontein and Langkloof vineyards, planted on south-east-facing slopes about 1,000 feet up and some 23 miles from the Atlantic. The fruit was hand-harvested in early January, whole-bunch pressed to stainless steel and fermented naturally; at 25 g/L of sugar the wine went straight to bottle to finish fermenting, then rested eight months there before release. Unfined, unfiltered and undisgorged. 10.5% ABV, 1.4 g/L residual sugar.
