Raul Perez is one of Bierzo's most influential winemakers. After making his first vintage at his family's winery in 1994, he founded Bodegas y Vinedos Raul Perez in 2005 in Valtuille de Abajo, the village where his family has tended vines for more than 300 years. His Ultreia St. Jacques is a Mencia-dominant field blend with Bastardo (Trousseau), Garnacha Tintorera, Palomino, Dona Blanca and more, drawn from many old parcels, mostly planted between the 1890s and the 1940s, in and around Valtuille on clay, alluvial stones and sand. It ferments spontaneously with a high share of whole clusters in large open-top oak vats, followed by a long maceration, and ages in used barrels until the next harvest; it is bottled unfined and unfiltered.
