Combel la Serre Malbec 'Chateau' Cahors 2022

Julien and Sophie Ilbert run Chateau Combel-la-Serre, a 23-25 hectare organic (Ecocert) estate on the Causse calcaire plateau near Saint-Vincent-Rive-d'Olt, planted essentially entirely to Malbec (locally Auxerrois) on red clay-limestone soils. Cellar practices favor shorter maceration than the regional norm, a high share of whole-cluster fermentation, only older barrels, and no fining or filtration.
