The De Oliveira-Chablis estate, established in 1955 in Fontenay-pres-Chablis on the Serein river, farms roughly 48 hectares. This 100% Chardonnay Chablis ferments in temperature-controlled stainless steel for 6-8 months; 13% ABV.
Tasting Notes
Golden yellow color with green tints; strong notes of white flowers alongside lemon and grapefruit, developing riper fruit aromas with an extended, refined finish.
Pairing Recommendation
Fish or poultry terrines, grilled fish, asparagus, assorted charcuterie, and goat cheese, Beaufort or Comte; also good as an aperitif.
