Domaine Goisot, based in Saint-Bris near Chablis, was a pioneer of biodynamic farming in Burgundy under Jean-Hugues Goisot; his son Guillaume continues the practice on chalky, Kimmeridgian limestone soils that mirror Chablis terroir just across the appellation line. Their Bourgogne Aligote is fermented and raised in stainless steel with very low yields.
