Sebastien David farms 12 biodynamic hectares in Saint-Nicolas-de-Bourgueil, working with amphorae and concrete eggs and a minimalist, no-additions cellar approach. 'Hurluberlu' -- his own village nickname, meaning roughly 'head in the clouds' -- is a Cabernet Franc declassified to Vin de France, blended from 20 distinct parcels and the estate's largest cuvee.
