Christoph Heiss, born into the Weingut Heiss winemaking family, gained experience in New Zealand, Germany and South Africa before focusing on his own "Malinga" natural-wine project using selected, organically farmed parcels of the family's 12-hectare Kamptal estate. Heissweiss blends 50% Gruner Veltliner, 40% Muller-Thurgau and 10% Welschriesling; the Muller-Thurgau is pressed with four days of maceration while the Gruner Veltliner and Welschriesling are whole-bunch pressed, all fermented spontaneously. Grapes are hand-harvested and the wine is bottled unfined and unfiltered with low sulfur.
