Profile & Story
The Vandelle family has farmed L'Etoile, Jura since 1883; the HVE-certified estate today spans 16 hectares across six generations, with Vin Jaune representing about 7% of production. Made only from Savagnin grown on the white marl soils of the upper Lias on Mont Morin, it is aged a minimum of six years and three months under a veil of yeast (sous voile) without topping up the barrels, then bottled in the traditional 620ml clavelin.
Tasting Notes
A yellow color with a powerful nose, aromas of nuts and spices (curry, ginger); a "vin de garde" capable of keeping its virtues for more than a century.
Pairing Recommendation
Accompanies snails, creamy dishes, exotic cuisine and cheese, including Comte; used in cooking for dishes such as coq au vin jaune et aux morilles.
