Domaine Balthazar has farmed in the Cornas appellation since 1931; Franck Balthazar took over from his father René in 2002 and works his vineyards organically, plowing with a horse. This Côtes du Rhône comes from three organically farmed hectares in the Drôme, between the northern and southern Rhône, blending Syrah with roughly 40% Grenache. The wine is fermented with native yeast, aged about 10 months in stainless steel, and bottled without fining or filtration with minimal sulfur.

Suggested with grilled burgers, merguez sausage, ratatouille, charcuterie, or roast chicken with Provençal herbs; best served with a slight chill.
