Hamakawa Shoten Brewery is located in the village of Tano in Kochi Prefecture, on Shikoku, near the Pacific coast — a setting that has shaped a local sake tradition of crisp, dry styles built to pair with fatty deep-water fish like bonito. This Tokubetsu Junmai, sold under the Bijofu ("Beautiful Sake Woman") brand as "The Gentleman," is made from Matsuyama Mii rice milled to 60%, fermented with AA-41 yeast using soft water drawn from the subterranean Nahari river.
