Profile & Story
The Girardin family has grown grapes in Santenay for 700 years; Justin Girardin joined the family estate in 2013 and took over from his father Jacques in 2017 as the 13th generation to lead it. He farms 17 hectares organically, growing only Chardonnay and Pinot Noir, and rarely uses new oak. This Bourgogne Pinot Noir comes from plots between Santenay and Maranges on clay and limestone-gravel soils, from vines averaging 50 years old. Grapes are hand-harvested with triple sorting, given a 5-day cold soak at 12°C with indigenous yeasts, fermented for about 20 days with gentle extraction, then aged 15 months (50% French oak from Allier and Vosges, 50% tank).
Tasting Notes
Fresh and elegant on the nose, with red fruit aromas. The palate is supple and lightly structured, fruity and fresh.
Pairing Recommendation
Pairs well with white meat, poultry, pies, and light cheeses.
