Profile & Story
Val de Mer is a Chablis-region project from négociant Patrick Piuze in partnership with Champagne grower François Moutard, producing traditional-method sparkling and still wines under sustainable viticulture. This cuvée is 100% Pinot Noir hand-harvested from vineyards around Tonnerre, about 10 miles from Chablis. Brief skin contact develops the wine's color before base fermentation in stainless steel and secondary fermentation in bottle; the wine rests 9 months on its lees before disgorgement with no dosage added (Brut Nature).
Tasting Notes
A bone-dry Crémant-style rosé of Pinot Noir from northern Burgundy, showing pale salmon color with fine, persistent bubbles. Expect red-berry and citrus-zest aromas, a taut mineral core, and a crisp, bracingly dry finish typical of Burgundy's cool-climate sparkling rosés.
