Domaine de Cabrials lies on chalk and clay terraces in the heart of the Languedoc-Roussillon, west of Béziers, one of the region's driest areas. The present mansion was built in the 19th century on the site of a medieval château, and the estate is farmed by Bernard Julien; its 19th-century cellar with large oak casks is still used for aging and storage today. This Chardonnay is harvested at night, when cooler temperatures preserve freshness, then destemmed and fermented at low temperature in stainless steel under CO2 to guard against oxidation, with a brief skin maceration before racking and a slow, temperature-controlled fermentation.
