Profile & Story
Savvoglou-Tsivolas, trading as Limnos Organic Wines, was founded in 2002 by oenologist Ioannis Savvoglou, who had already spent twenty years working the PDO Lemnos zone, together with Pantelis Tsivolas. The estate farms roughly 650 organically certified acres across several villages on the volcanic island of Limnos, focusing on indigenous varieties, most notably Muscat of Alexandria and Limnio, alongside Aegean varieties such as Assyrtiko.
Tasting Notes
This organic, aromatic Assyrtiko has a sinewy texture and pronounced marine minerality and salinity — a 'thalassitis', or 'made by the sea', style shaped by Limnos's volcanic soils.

Pairs well with fish, seafood, poultry, pastas in white sauce and soft-flavored cheeses.
