Cervaro della Sala, from Antinori's Castello della Sala estate in Umbria, is a blend of Chardonnay with a small amount of Grechetto, conceived as a white wine built to age. It was one of the first Italian white wines to undergo malolactic fermentation and ageing in barriques; the first vintage, 1985, was made by chief oenologist Renzo Cotarella. The name honours the Monaldeschi della Cervara family, historic owners of Castello della Sala.
Tasting Notes
Light straw yellow with greenish hues. The nose presents slight smoky notes of cedar and flint followed by floral hints of Spanish broom and mimosa blossom. The palate is vibrant and fresh, with vanilla, lemon butter and small pastries. It has outstanding ageing potential but can be enjoyed immediately.
