Caracol dos Profetas comes from the island of Porto Santo (D.O. Madeirense), where the Companhia de Vinhos dos Profetas e dos Villões works the island's few remaining hectares of old, creeping vines — the islanders are nicknamed the 'Prophets'. Caracol is a grape traditional to Porto Santo, genetically very close to Listrão. The 40–80-year-old vines grow low to the ground, sheltered from the wind by reed beds and stone walls, on limestone, sandy-loam soils; the wine is hand-harvested and vinified on the island, fermented on its lees in stainless steel and aged ten months. 12% alcohol.
Tasting Notes
Pale yellow. An intense, fresh nose of floral notes combined with iodine and gunpowder. Fresh and crisp on the attack, with excellent freshness and acidity.
Pairing Recommendation
Excellent with fresh dishes, ceviche, carpaccio, oysters, clams and grilled white fish. Store at 6–8 °C and serve at 10 °C.
