M. Chapoutier is an organic and biodynamic producer in the Rhône Valley. Its white Hermitage 'Chante-Alouette' blends several Hermitage terroirs — essentially sedimentary (fluvio-glacial alluvium, red clay and loess) with finely decomposed granite — from sectors of Le Méal, les Murets and l'Ermite. The whole grapes are pressed with moderate sulfur and light settling, fermented with indigenous yeasts mostly in half-muids and barrels (10% new) plus stainless steel, and aged on the lees for about ten months.
Tasting Notes
Brilliant green-gold. The nose is complex and subtle, with aromas of quince, walnut, honey, ginger and acacia and a hint of linden. The palate has a clean, unaggressive attack and an almond finish — very elegant and very long.
Pairing Recommendation
Pairs with foie gras, langoustine, lobster, fish, poultry in sauce, white meat, goat and blue cheeses, and spicy dishes (excellent with curry); also poultry cooked with mushrooms or truffles on older vintages. Serve at 12–14 °C.
