Palmento Costanzo farms on the northern slopes of Mount Etna in Sicily, on mineral-rich volcanic soils. 'Bianco di Sei' (Etna Bianco DOC) is made from Carricante (about 70%) and Catarratto (about 30%) grown on old bush vines; the grapes are softly pressed with no maceration, and the wine is aged about six months in stainless steel and six months in bottle.
Tasting Notes
Pale yellow. Aromas of white flowers and citrus with white-fleshed fruit, almond blossom and notes of sage and mint. The palate is savoury and rocky, with vibrant freshness and good persistence on a long, mineral finish.
Pairing Recommendation
Serve at 10–12 °C.
