Victorine de Chastenay's Cremant de Bourgogne is drawn from fruit in the Cote de Nuits and Cote de Beaune, an unusual pedigree for a Cremant, which is more often made from grapes in the Maconnais or Beaujolais. The wine is vinified entirely in tank to preserve the freshness of the Cote d'Or fruit, then aged on its lees for 20 months, well beyond the appellation's minimum.
