Profile & Story
Anima Mundi is Agustí Torelló Roca's personal natural-wine project in the Alt Penedès, near Sant Sadurní d'Anoia, farmed organically and biodynamically with an emphasis on minimal intervention. Camí dels Xops blends Macabeu and Xarel·lo from two adjoining parcels on the calcareous slopes of the Costers d'Ordal, fermented with native yeasts in stainless steel and old French oak, then bottled unfiltered before fermentation fully finishes.
Tasting Notes
Bottled in the ancestral method with fermentation still finishing inside, this pét-nat-style sparkler pours a hazy straw gold with a soft, natural fizz. Bone dry and lively, with orchard fruit, citrus zest and a touch of bread-dough yeastiness carrying through to a chalky, mineral finish.
