Profile & Story
Akishika Shuzo was founded in Nose, Osaka in 1886; under 6th-generation kuramoto Oku Hiroaki its motto is 'from our own fields to bottle,' farming about 25 hectares of biodynamically grown rice. 'Yama' is named for the yamahai method and the Yamadanishiki rice used, grown organically by the brewery and polished to 70%.
Tasting Notes
A junmai muroka nama genshu (unpasteurized, undiluted, unfiltered) yamahai sake at ~17% abv, fermented with yeast #7 - rich fruit character over a fine acidic backbone, with savory depth and a long finish. Served as a 3 oz pour.
