Colete is a project born of the friendship between winemaker Rajat Parr and Pomerol-trained winemaker Marie Vayron Ponsonnet, best known for Pomerol-style Napa Merlot. Its white is built around old-vine Semillon (Yount Mill, planted 1968) with Sauvignon Blanc from Ryan's Vineyard, from organically grown fruit.
Tasting Notes
Co-fermented in old barrel with indigenous yeast and aged about 11 months in used 228L French oak, with no added sulfur until bottling - a textural, saline, dry white.
