Philippe Chatillon spent 18 years managing Domaine de La Pinte in Arbois before starting his own biodynamic Jura estate near Poligny in 2013. He works entirely by hand, uses biodynamic preparations, and relies on old oak, spontaneous fermentations and bottling without fining or filtration. This Vin Jaune is 100% Savagnin aged under a veil of yeast (sous voile) in oak for at least six years.
Tasting Notes
Deep, luminous golden amber. Complex, powerful nose of dry walnut, sweet curry, fresh ginger, oriental spice and lightly smoked undergrowth. Rich, unctuous and elongated on the palate, with noble acidity and persistent salinity and a long, savory, vibrant finish. Served in a 1.5 oz pour.
Pairing Recommendation
Pine nuts, aged Comte, poultry in sauce, or sweet-curry-spiced dishes.
