South Hill Cider is a heirloom cidery in Ithaca, in the Finger Lakes region of Upstate New York, one of the premier cider-making regions in the U.S. String Theory is composed of true cider apple varieties (Dabinett, Chisel Jersey, Geneva Tremlett's, Granny Smith), wild-fermented slowly over roughly seven months, then bottled just before fermentation completes using the Ancestral Method (pet-nat). The name references both the physics model of supersymmetry and traditional metaphysical worldviews including biodynamics; head cidermaker Steve Selin is a longtime musician who often names ciders after his musical roots.
Tasting Notes
Rich, textured, wild-fermented and intensely balanced pet-nat cider inspired by Breton cidermaking. Herbal aromatics reminiscent of thyme, with flavors of tangerine, peach, clove and honey.
Pairing Recommendation
Szechuan noodles; goat cheese (Lively Run's Cayuga Blue) with fresh crostini; chocolate cheesecake.
