Terada Honke, founded in 1673 in Chiba, has brewed continuously for over 345 years. Daigo no Shizuku revives the ancient bodaimoto starter method originating at Bodaisen Shoryakuji Temple in Nara (Kamakura-Muromachi era); former temple monk Fujinami-san became toji in 2002 and first released the sake in 2003. It is brewed from rice grown without pesticides or chemical fertilizer, low-polished and low-intervention.
Tasting Notes
An intensely cloudy, yellow, low-polish bodaimoto sake with notes of orange peel, honey and lemon and a heavy dose of acidity - reminiscent of tej (Ethiopian honey wine). Served as a 3 oz pour.
