Profile & Story
Isabelle and Denis Pommier took over the family's vines around Poinchy, near Chablis, in 1990, and have since grown the estate to 16 hectares spanning Petit Chablis, Chablis and three Premier Crus (Fourchaume, Côte de Léchet and Troesmes); the domaine has been organically certified since 2014. This village Chablis comes from 4.7 hectares of 25-year-old Chardonnay vines, half on Kimméridgien slopes within Chablis itself and half on Portlandien slopes at Ligny-le-Châtel, both over limestone soils. The estate farms organically, with soil cultivation and disbudding in the vineyard. The juice settles for 24 hours before native-yeast alcoholic fermentation and malolactic fermentation, both in temperature-regulated stainless steel tanks; the wine matures on its fine lees for six months, receives a light fining, and spends twelve months in tank before bottling. It is built to age five to six years and is best served at 10-12°C.

A round, attractive wine, rich and fleshy, with a good expression of Chardonnay and a fresh, acidulous finish.
