Domaine du Grand Mouton, the estate behind the Louis Métaireau label, farms in the heart of the Muscadet Sèvre-et-Maine appellation on soils of gneiss, granite and amphibolite. This Extra Brut sparkling wine is made from 100% Melon de Bourgogne, hand-harvested from the Grand Mouton vineyard's oldest vines, planted in 1937 and 1945 and farmed organically. Following primary fermentation, the wine spends six months sur lie; a secondary fermentation then takes place using yeast carried over from the first, and the wine is aged sur lattes for twelve months by the traditional method before release.
