Established in 2012, Maître de Chai is the personal project of Marty Winters and Alex Pitts, who met working as chefs at Cyrus in Sonoma and also cooked at the French Laundry before turning to winemaking. Based in Berkeley, California, the pair source grapes from distinct, impeccably farmed single vineyards and favor a minimal-intervention approach, describing their process as tasting and waiting, letting each wine develop and speak for the place it comes from. Red Table Wine is built around Zinfandel sourced primarily from the Abba Vineyard near Lodi, with small amounts of other red grapes rounding out the blend, drawing on the cool nights and delta breezes of the Lodi area to preserve vibrant acidity.
