Profile & Story

Pax Mahle founded Pax Wines in Sebastopol, California in 2000, building a reputation for site-driven, minimal-intervention wines from carefully chosen vineyard partnerships. Helios is Pax's effort to elevate the profile of great American Chenin Blanc, in the same spirit as the winery's work with Syrah and Gamay Noir: they help plant high-quality material in interesting sites, bottle the standout parcels as single-vineyard wines, and blend the remaining top lots — drawn from Lyman Ranch in Amador County, Marine Terraces in the Santa Cruz Mountains, and Alder Springs Vineyard in Laytonville — into this more accessible bottling. Helios is 100% Chenin Blanc, whole-cluster pressed and fermented with indigenous yeasts, then aged roughly seven months in a mix of Austrian and French oak 500-liter puncheons and stainless steel.
