Profile & Story
Unico Zelo is the project of winemaking couple Brendan and Laura Carter, based in the Clare Valley of South Australia, who make Italian-inspired, textural, site-expressive wines with a playful streak. Pastafarian is their tongue-in-cheek homage to the Church of the Flying Spaghetti Monster, grown on red clay loam over shale in the Clare Valley, on Ngadjuri Country. The Carters have worked with this Sangiovese fruit for several years through their Truffle Hound label and, citing consistently strong quality, have made recent vintages of Pastafarian from Sangiovese.
