Profile & Story
The Blazic family has farmed in Medana, in the village of Plesivo (Goriska Brda), since 1890, now run across three generations. Jakot Plesivo is made from 100% Sauvignonasse (locally called Jakot), from 55-year-old vines on steep southwest-facing flysch slopes of clay, marl, limestone, and sandstone. The wine undergoes a week-long spontaneous fermentation on the skins in open vats, then ages 24 months in neutral 500L oak barrels.
Tasting Notes
Sparkling, intense golden yellow in color, with rich aromas of Mediterranean flowers, citrus, and white fruit layered with fresh-cut grass and a mineral, faintly caramel note; the palate is dry, soft, and mineral-driven, with a long, persistent finish.
Pairing Recommendation
Pairs well with herb omelettes, vegetable risotto, and pasta with pesto or tarragon dumplings.
