Profile & Story
Filipa Pato, daughter of Bairrada icon Luis Pato, launched her own project in 2001 and now farms roughly 12 hectares of biodynamic (Demeter-certified) vineyards scattered across Bairrada with her husband, Belgian sommelier William Wouters, under the philosophy of 'Vinhos Autenticos Sem Maquilhagem' (Authentic Wines Without Makeup). Post Quercus Baga is 100% Baga hand-harvested from old, head-pruned vines on clay-limestone soils; the grapes ferment and age for six months entirely in clay amphorae rather than oak, a technique inspired by the Roman-era winemaking history of the region, hence the name 'Post Quercus,' meaning 'after oak.'
Tasting Notes
The wine is savory and chalky, with aromas of macerated cherries, raspberries, dried cranberries, dried herbs and red flowers. It opens with a gush of tart red fruit and chalky texture, refreshing lift and tension, and fine, well-integrated tannins that carry through a medium-bodied finish.
