Domaine Val de Caire is an organic estate spanning roughly 17 to 18 hectares in Rognes and Lambesc, within the Coteaux d'Aix-en-Provence appellation, created in 2003 by Guillaume Reynier and now run with Veronique Reynier, certified organic since 2011. The Tradition Rose, their entry-tier stainless-steel cuvee, is a blend of 50% Grenache, 42% Cinsault, and 8% Syrah, harvested by night, destemmed and crushed with direct pressing, fermented at 16C with malolactic fermentation blocked, and aged in stainless steel tank. It finishes at 12.95% ABV.
