Profile & Story
Produced by Firriato at their Tenuta di Cavanera Etnea estate in Castiglione di Sicilia, this Etna Rosso comes from vines on sandy, volcanic soils on the northern slope of Mount Etna at roughly 700m elevation, exposed north-east. It is a blend of Nerello Mascalese and Nerello Cappuccio, fermented in temperature-controlled steel tanks and matured approximately six months in bottle before release.
Tasting Notes
Intense ruby red with bright purple nuances. The nose opens with mineral notes and aromas of cassis, blueberries, plum jam, black cherries, liquorice, pepper and dried violets. The palate is well-balanced and harmonious, rich and warm with smooth, quality tannins, closing on a long, juicy finish.
Pairing Recommendation
Beef tartare with seasonal vegetables, pureed mustard soup, and Dijon mustard.
