Profile & Story

La Staffa is an organic-certified winery in Staffolo, in the Marche region, founded by Riccardo Baldi, who has been recognized as one of the region's finest Verdicchio producers. The estate's Verdicchio dei Castelli di Jesi Classico Superiore is grown in limestone-rich clay soil at roughly 400 meters elevation; grapes are hand-harvested into small boxes and immediately pressed, then fermented with indigenous yeasts in stainless steel and cement tanks for about 15 days, before aging on fine lees for approximately six months prior to spring bottling. The wine undergoes natural cold stabilization and light non-sterile filtration.

Tasting Notes

Pale straw in color, distinctly aromatic with notes of almond, citrus, green apple, and herbs, backed by flint and straw-like minerality. Medium-weight on the palate with fresh acidity and a long finish, well expressive of its territory.

Pairing Recommendation

Recommended as a dry aperitif, or paired with seafood dishes, seafood pastas, or roast chicken.
