Profile & Story
Metal House Cider is a small-batch cidery run by co-owners and cidermakers Kimberly Kae and Matt DiFrancesco, based on an 18-acre farm in New Paltz, NY, in the Hudson Valley. All cider is made tree-to-label in house, using apples from untreated and abandoned orchards, including their own, following biodynamic and biointensive protocols, made in the methode champenoise. Pearlina blends wild pears with Esopus-orchard apples (Jonathan, Idared, and Rambo varieties); it is bottle-conditioned and undisgorged, at 8.5% ABV.
Tasting Notes
An easy sipper with notes of vanilla and spice, moderate acid, and a gorgeous mouthfeel; frothy, a little funky, with a balanced, moderate acidity.
