Profile & Story

Domaine Bailly-Reverdy is in the village of Bue, 5 km from Sancerre, a village renowned for its large number of winegrowers - around 30 families - and for the diversity of its terroirs. The estate's name dates from the marriage of Bernard Bailly and Marie-Therese Reverdy in April 1952; Bernard began bottling at the estate in 1956, and from the outset the family chose to harvest by hand. Jean-Francois joined in 1979 and Franck, after studying oenology in Bordeaux, in 1991; the estate stopped using herbicides in 1995 and adopted environmentally respectful practices. The Cuvee La Mercy-Dieu blanc is Sancerre from Sauvignon Blanc across 10.60 hectares, blending parcels on the three emblematic soils of the appellation - caillottes, silex and terres blanches. Hand-picked and carefully sorted, the grapes are gently pneumatically pressed and the must cold-settled for 12 to 24 hours to promote clarity and purity of aroma; natural fermentation follows in temperature-controlled vats, and ageing on fine lees for several months brings added complexity and volume.

Tasting Notes

Pale yellow with light green highlights in its youth. The nose is complex and expressive, opening with notes of citrus and white flowers delicately underscored by a mineral touch. On the palate the attack is clean and fresh, giving way to a structure that combines liveliness with roundness; generous and finely aromatic, it unfolds into a long, persistent and elegant finish.

Pairing Recommendation

The domaine suggests Crottin de Chavignol goat cheese, grilled fish, seafood and shellfish, as well as creamy poultry dishes or lightly spiced cuisine.
