Profile & Story

Special Cuvee is the champagne emblematic of Bollinger's expertise, and its English name encapsulates its history: it was Georges Bollinger's British agent who, in 1911, christened it Special Cuvee, finding that the expression 'non-vintage brut' did not befit a champagne of such subtlety. It is a delicate assembly of the expression of a single harvest and a majority of reserve wines, some of them held in magnums for between seven and fifteen years, and is composed of over 85% Grand and Premier crus of the three main Champagne varieties: 60% Pinot Noir, 25% Chardonnay and 15% Meunier. It is cellar aged for twice as long as the appellation requires and moderately dosed at between 7 and 8 grams per litre.

Tasting Notes

A golden colour distinctive of black grape varieties, with very fine bubbles. The nose has a beautiful aromatic complexity of ripe fruit and spice, with hints of roasted apples, compote and peaches. The palate is a subtle combination of structure, length and vivacity, its bubbles like velvet, showing pear, brioche and spicy aromas with notes of fresh walnut.

Pairing Recommendation

Bollinger suggests truffled scallop carpaccio as the perfect pairing, and recommends serving between 8 and 10 C. The wine can be enjoyed on release or cellared further.
