Commanderie de Peyrassol has broadened its offering using fruit from its IGP-classified vineyard around the Coudonnier area, completed with sourcings from local partnerships; the estate carefully selects terroirs and shares best practices with its partner growers, and makes the choice to be organic in coherence with the range of its estate wines. La Croix is a blend of Cinsault, Grenache, Syrah and Caladoc at 12.75% alcohol. After destemming and a pneumatic pressing, the wine undergoes a four-hour cold settling to remove the heavy lees, then is racked into stainless steel tank for temperature-controlled fermentation, with a short ageing on fine lees before light filtration and a few months in stainless steel vats. It is an accessible blend in the true style of Provencal rose.
