Esprit de Pavie is produced by Vignobles Perse (Gérard Perse, owner of Château Pavie) — a Bordeaux red blend of roughly 70% Merlot and 30% Cabernet Franc. It comes from a diversity of terroirs on the south-facing slopes of the Dordogne valley (sandy-gravelly foothills, clay hillsides and a clay-limestone plateau) and ages about 15 months in once-used barrels.
