AT Roca is a small family estate in the Penedès, farming organically and regeneratively to give full expression to this Catalan terroir. The family works within the Clàssic Penedès category rather than the broader Cava designation, ensuring every wine is vintage-dated, estate-grown, and aged a minimum of fifteen months. Rosat Reserva is a modern reinterpretation of the region's traditional sparkling rosés, made from an equal blend of Macabeu and Garnatxa Negra grown on the well-drained, fossil-rich calcareous soils of Sant Sebastià dels Gorgs. The grapes are hand-harvested and fermented in stainless steel, and the wine is aged twenty months in bottle before disgorgement, then bottled Brut Nature with no dosage.
