Domaine Les Roches Bleues is a family winery in Odenas, farming nine hectares across the Brouilly and Côte de Brouilly appellations of Beaujolais, run today by Jonathan Buisson, a certified organic producer. Les Trois Loups — 'the three wolves' — honors three generations of the family who built the domaine: Buisson, his father, and his grandfather, who started the estate. The wine is 100% Gamay, handpicked in small crates and selected in the vineyard, then given twelve days of whole-cluster, semi-carbonic maceration. Fermentation continues with native yeasts in temperature-controlled cement tanks, and after racking the wine spends twelve months in fifty-year-old foudres before being bottled unfined and unfiltered.
