Commanderie de Peyrassol is a historic Provence estate founded by the Knights Templar in the 13th century, with recorded winemaking dating to 1256 and continuing uninterrupted since. The 850-hectare estate, farmed organically, sits at the foothills of the Massif des Maures. La Croix is the domaine's entry-level rosé, made from fruit grown just outside the Côtes de Provence appellation or harvested with neighboring growers, blending roughly 40% Cinsault, 30% Grenache, and 20% Syrah. The grapes are destemmed and pneumatically pressed, given a four-hour cold settling to remove heavy lees, then fermented in temperature-controlled stainless steel.
