About the Wine
From its roots in France in the brandy-producing regions of Cognac and Armagnac, to being the second most planted variety in South Africa today, Colombar has a long, winding history. It was originally brought to South Africa as a grape for brandy distillation for the Dutch East India Company. But Colombar grew to be so much more than that, whose history as a foundation for exceptional white wines is often forgotten. Fortunately, Processus is paying homage to its history, bringing more attention to the under-appreciated beauty.
Tasting Notes
The aromas are of golden figs, Valencia orange, fragrant night blossoms, and wet stones. On the palate there are apricots, ginger root, bay leaf, and verdant green spices. This wine shows an amazing balance between crunchy acidity and mouth-coating richness along with unbelievable length. It just goes on and on.
