Profile & Story
The grapes are harvested by hand and early to preserve their freshness and natural tension. After destemming, all the stems are reincorporated in layered “mille-feuille” fashion to provide structure, tannins, and to encourage the circulation of the must. Fermentation takes place with native yeasts and without chemical additives in concrete vats, a material that allows controlled micro-oxygenation and protects the fruit. Finally, the wine undergoes a partial malolactic fermentation, maintaining its natural acidity and reinforcing its freshness.
Tasting Notes
Garnet red color. A complex nose with fresh red fruits, wildflowers, and gunpowder, complemented by notes of rosemary, thyme, and white pepper. On the palate it is juicy and silky, with vibrant acidity that enhances its structure and a persistent finish.
Pairing Recommendation
It pairs perfectly with medium-intensity Asian cuisine, where its freshness and tension enhance the flavors and refresh the palate, especially with spicy dishes.
