EDAD ANTIGUA is the spine of Altar Uco. Wines that we dreamed and that we began to bring to life since 2018 vintage. We believe in "time" as the vital element to convey the textures and expressions of our region that cannot be explained by means of words. These are the emotions that usually give us the most memorable wines in the world and that we find in our wines thanks to the course of time. With all our stamp and influence of those wines, together with our expertise in the Uco Valley, we dreamed and created from those unique vineyards these two Altars... where everything is in its place and that will make it difficult for anyone who comes across them to forget them. Grape varieties: 50% Chenin Blanc, 25% Chardonnay, and 25% Sauvignon Blanc. Winemaking: Whole cluster direct pressing, in a concrete egg where it underwent co-fermentation with native yeasts. Average temperature of 20ºC. Aging: 3 years in Austrian Stockinger foudre, plus 3 years in bottle.
Tasting Notes
Tasting notes: A vibrant white wine. The nose presents aromas of white peaches and candied lemon peel, combined with hints of fresh mountain grass, walnut and almonds. In addition to the complexity of its nose, the greatness of this wine comes when sipping it… an austere, tight, almost brick-like wine. It has a crispness that is hard to imagine for a white of this ageing. And its tension is complemented with elegance. It is both electric and smooth... an exceptional white, our greatest pride and joy.
Pairing Recommendation
Recommended pairings: due to its elegance, it is ideal to serve with trout gravlax, octopus, anchovies, high-quality charcuterie, goat cheeses and homegrown tomatoes with extra-virgin olive oil and sea salt. However, due to its complexity, it can be enjoyed on its own with hazelnuts and roasted almonds.
