Profile & Story
This wine line was intended to be drunk while young (three years old), although it has a great evolving capacity and achieves higher complexity over time. This is our interpretation of an authentic blend from Gualtallary. Vineyards: All grapes are grown in 7 to 12-year-old vineyards located in Gualtallary, over 1,200 meters above sea level. Varieties: Malbec 90% & Cabernet Franc 10% Elaboration: Manual harvest. Both varieties were co-fermented in square concrete tanks with native yeasts. Maceration time of 30 days. Aging: 12 months in French oak barrels (30% new, 30% of second and 40% of third use) of 500 liters capacity. Further aging for 12 months in concrete amphorae.
Tasting Notes
A young red wine with elegant and clean aromas which are reminiscent of black and a balanced and refreshing acidity. The fruit and the wood are perfectly assembled, creating a round wine with no rough edges. Long, slightly smoked.
Pairing Recommendation
It pairs well with firewood dishes such as pig or T-bone steaks or Patagonian lamb, as well as ripened cheeses like Parmigiano or Comte.
