Profile & Story
The 2019–2020 season was characterized by a very dry winter and a spring and summer with high temperatures, which advanced flowering and fruit set in our vineyards. Due to the hot summer and the spread of COVID-19, the winemaking team decided to advance the harvest by 3 to 4 weeks compared to previous years. Our grapes showed good sanitary conditions and high fruit quality. White wines are fresh and intensely aromatic, while our red wines display pleasant structure and are very flavorful. After careful selection at harvest, the grapes are transported in small 10 kg boxes to the winery, where they undergo a second bunch selection and a third selection of individual berries. The selected berries are transferred to stainless steel tanks for a period of skin contact at 7°C (44.6°F). Fermentation takes place at an average temperature of 25°C (77°F), lasting around 9 to 12 days, followed by post-fermentation maceration for greater extraction of color and aromas. After this process, 75% of the wine is transferred by gravity to new French oak barrels and 25% to one-year-old barrels for 15 months of aging, during which full malolactic fermentation also occurs. After this period, the wine is bottled unfiltered and continues to evolve and age in our cellar for at least two more years.
Tasting Notes
It displays a brick color, reflecting its evolution in barrel and bottle. On the nose, it shows aromas of ripe fruits such as plum, fig, and stone fruits, accompanied by subtle notes of cinnamon, leather, vanilla, and tobacco. Its aromatic profile is highly complex and offers room for further development, and decanting is recommended before enjoying. On the palate, the same aromatic characteristics are faithfully expressed, with a long, spicy finish that harmonizes nose and palate. The tannins are expressive and elegant, with pronounced acidity contributed by the Syrah, resulting in a balanced, sophisticated wine with excellent structure.
Pairing Recommendation
Its structured tannins make it ideal for pairing with red meats, pasta with creamy sauces such as carbonara, and sautéed vegetables with soy sauce. It also pairs perfectly with roasted cauliflower purée, grilled asparagus with a touch of soy, and charcuterie boards accompanied by semi-soft cheeses, such as Morbier.
