Cantina Marilina was founded in 2001 by Angelo Paterno in Noto, in Sicily's southeastern Val di Noto, and is now run by his daughters Marilina and Federica. The estate farms 60 hectares organically, dedicating close to half the property to polyculture for biodiversity. Sikele is 100% organically farmed Nero d'Avola, hand-harvested from Noto's terroir, fermented spontaneously with indigenous yeast after a 20-day maceration in concrete, then aged 8 months in concrete and 3 months in bottle -- unfined, unfiltered, minimal sulfur.
