Chateau le Payral is a family estate in Saussignac, near Bergerac in southwest France, run by Thierry and Isabelle Daulhiac since 1992. The property has been certified organic since 2006 and follows biodynamic principles in the vineyard and cellar. This white blend combines 50% Sauvignon Blanc, 30% Semillon and 20% Muscadelle, hand-harvested and given an eighteen-hour skin maceration before native-yeast fermentation.
